Sang de Pigeon Shiraz 2021, Barossa Valley
Sang de Pigeon (pigeon’s blood) is a nod to Michael's former life as a jewellery valuer. It’s the trade term for the colour of the finest rubies, invariably from the Mogok Stone Tract in Myanmar. The precious grapes for this wine were grown far to the south-east, in South Australia’s Barossa Valley.
Growing season: Fair winter rains and a cool summer gave us a healthy crop of excellent quality.
Winemaking: Hand-picked from Smyth Road, Stonewell Road and Eden Valley. 77% destemmed, 23% whole bunch, wild fermented, pressed to French oak, matured for 20 months in barrel (28% new).
Bottles produced: 4280
Alcohol 14.3%; Titratable acidity 5.9g/L; pH 3.54; Residual sugar 0.65g/L.
